Ingredients

2 c. cooked beets
1 c. vinegar
3/4 c. sugar
1 tsp. salt
1 Tbsp. whole cloves
2 sticks cinnamon
1 Tbsp. whole allspice
Preparation

Drain beets.
Add the beet juice to the ingredients.
Boil until sugar dissolves.
Remove from heat and add the beets.
I add peeled, hard-boiled eggs after the beets have cooled, making sure eggs are all covered with the liquid.
Eggs are best if they are made at least a day before you want to serve them.
