Candied Papaya Coconut Bread - cooking recipe
Ingredients

1 c. margarine
4 eggs
1 tsp. soda
2 c. sugar
1/2 c. buttermilk
3 1/2 c. flour
pinch of salt
1 c. cut up dates
1 c. cut up candied papaya
2 c. pecans or walnuts, coarsely chopped
1 c. coconut
Preparation

Cream the margarine and sugar. Add eggs, one at a time, beating well. Sift soda and salt with flour and add alternately with buttermilk. Beat well and add fruit and nuts.
Bake 2 hours in greased and floured tube pan at 250\u00b0.
Let cool in pan, otherwise it will fall apart.
May use long narrow bread pan instead of tube pan.
