Multi-Grain Flapjacks - cooking recipe
Ingredients

1 1/2 c. whole wheat flour
1 c. all-purpose flour
1 c. rolled oats (old-fashioned)
1/2 c. yellow cornmeal
1 Tbsp. baking powder
2 tsp. baking soda
1 tsp. salt
3/4 c. cold, unsalted butter, cut into pieces
4 eggs
4 c. buttermilk
1/2 c. honey
1 c. chopped pecans (optional)

Preparation

Process flours, oats, cornmeal, baking powder, baking soda and salt until well blended.
Add butter and process until mixture resembles coarse meal.
Beat eggs and buttermilk together.
Beat in honey.
Stir in flour mixture and optional nuts.
Heat griddle and melt butter to coat.
Ladle the batter to make pancakes and cook until golden on both sides.
Serve with butter and syrup or yogurt and fresh fruit.
Serves 6 to 8.
