Zucchini Walnut Bread - cooking recipe
Ingredients

1 c. walnuts, chopped
4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. unsifted flour
2 c. unpeeled grated zucchini
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. baking powder
1 tsp. vanilla
1 c. raisins (optional)
Preparation

Beat eggs.
Gradually beat in sugar, then oil.
Combine dry ingredients.
Add to egg mixture alternating with zucchini.
Stir in raisins, nuts and vanilla.
Divide into 2 greased and lightly floured loaf pans (9 x 5 x 2 3/4-inch).
