Rice Parmigiana(Adopted From "The Vegetarian Epicure") - cooking recipe

Ingredients
    2 c. cooked rice*
    1 c. chopped fresh parsley
    1 c. Parmesan cheese, grated or powder
    2 eggs, beaten
    1/4 c. milk (or more if needed)
    1/4 c. chopped scallions or onions
    spinach (optional)
    chives (optional)
Preparation
    Toss rice with parsley, onion and cheese.
    Beat eggs with milk and add salt and pepper, if desired.
    Combine 2 mixtures and pour into buttered baking dish.
    Bake at 350\u00b0 for 30 minutes or so until firm.
