Fried Green Tomatoes - cooking recipe

Ingredients
    2 large green tomatoes
    1/4 tsp. salt
    1/8 tsp. black pepper
    2/3 c. bread crumbs
    2 large eggs
    1/8 tsp. salt
    1/4 c. plain flour
Preparation
    Cut the tomatoes crosswise into 3/8-inch thick slices.
    In small bowl, beat together eggs, salt and pepper until frothy.
    In separate small bowls, place bread crumbs and flour.
    In a large skillet, melt tablespoon oil or shortening over medium heat. Dip each tomato slice into egg, then flour, then egg again and then crumbs. Fry tomato slices until golden brown on one side. Turn and fry to golden on remaining side, 4 to 5 minutes total, adding more oil as needed. Serve immediately or keep warm in a 300\u00b0 oven no longer than 15 minutes. Serves 4.
