Zucchini Relish - cooking recipe
Ingredients

4 c. onions, diced
10 c. zucchini, ground
2 c. green and red peppers, diced
3 to 5 Tbsp. salt
4 c. sugar
2 1/4 c. white vinegar
1 tsp. turmeric
2 tsp. celery seed
1 tsp. dry mustard
1 to 2 Tbsp. cornstarch
Preparation

Mix the first 4 ingredients and let stand overnight, then drain.
Place mix in large pan.
Mix the sugar, vinegar, turmeric, celery seed and mustard together.
Add to vegetable mixture. Simmer on stove until vegetables are cooked.
Add cornstarch to a little water and add to relish.
Cook until clear.
Seal hot.
