Large Zucchini Muffins - cooking recipe

Ingredients
    4 eggs, beaten
    1 to 1 1/2 c. Crisco oil
    3 c. sugar
    3 c. grated zucchini
    3 1/2 c. flour
    2 Tbsp. baking powder
    1 Tbsp. baking soda
    1 1/2 tsp. salt
    2 tsp. cinnamon
    1 1/2 c. chopped nuts or raisins (optional)
Preparation
    Mix, with mixer, first four ingredients.
    Add flour.
    Continue mixing.
    By hand, add remaining ingredients.
    Bake at 325\u00b0 for 45 minutes in a large muffin pan or 1 hour in loaf pan.
