Calabacitas - cooking recipe

Ingredients
    3 Tbsp. bacon drippings, butter or margarine
    2 1/2 lb. zucchini, cut into 1/2-inch cubes
    1 1/2 c. freshly cut corn from 3 or 4 medium size ears or 1 (10 oz.) pkg. frozen corn, thawed
    1/2 c. chopped green chiles
    1 medium size onion, chopped
    2 cloves garlic, minced or pressed
    salt and pepper to taste
Preparation
    In a wide frying pan over high heat, melt drippings.
    Add zucchini, corn, chiles, onion and garlic.
    Cook, stirring often, until vegetables are tender/crisp, about 5 minutes.
    Add salt and pepper to taste.
    Makes 8 to 10 servings.
