Spiced Pear Butter - cooking recipe

Ingredients
    7 qt. pears, cut up (Bosc or Bartlett)
    1 c. wine (red)
    1/2 c. vinegar (white)
    6 sticks cinnamon
    2 Tbsp. cloves
    2 c. sugar
    1/4 c. lemon juice
    1/2 c. orange juice
    1/4 tsp. allspice
Preparation
    Cook pears with wine, vinegar, cinnamon and cloves over medium heat until pears are soft, about 10 minutes.
    Put through a food mill and return puree to a heavy pot (see Note).
    Add sugar, lemon juice and allspice and stir.
    Cook over low heat for 1 hour or until thickened.
    Watch for scorching.
    Makes about 5 pints.
