Ingredients

2 c. all-purpose flour
1 c. Hungry Jack mashed potato flakes
1 1/2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger, ground
1/4 tsp. cloves, ground
1 c. margarine or butter, softened
1 egg
1/4 c. sugar
Preparation

Heat oven to 375\u00b0.
Lightly spoon flour into measuring cup; level off.
In large bowl, combine all ingredients except 1/4 cup sugar; mix until well blended.
Shape into 1-inch balls.
Place 2 inches apart on ungreased cookie sheets.
Flatten with the bottom of a glass dipped in the 1/4 cup sugar.
Bake at 375\u00b0 for 7 to 9 minutes or until lightly browned.
Let stand 1 minute before removing from cookie sheet.
Cool on racks.
Store in tightly covered container.
Makes 5 dozen cookies.
