Ratatouille(8 Servings) - cooking recipe

Ingredients
    1/3 c. olive oil
    3/4 c. thinly sliced 1015 onions
    2 cloves garlic
    4 julienned green peppers
    2 1/2 c. sliced yellow squash
    3 c. sliced zucchini
    2 c. seeded tomatoes
    Italian spices
Preparation
    Saute first 3 ingredients; drain oil.
    Add rest of ingredients; simmer over low heat, covered, for 35 to 45 minutes. Uncover about 10 minutes prior to serving to reduce liquid.
