Raised Potato Doughnuts - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. shortening
    1 1/2 tsp. salt
    1 c. mashed potatoes (lukewarm)
    2 c. milk
    2 pkg. yeast
    1/4 c. warm water
    3 eggs, beaten lightly
    1/2 tsp. lemon extract
    1/4 tsp. cinnamon
    8 c. flour
    shortening or salad oil
Preparation
    Add
    sugar,
    shortening,
    salt and potatoes.
    Heat milk until film
    forms
    on top (DO NOT BOIL).
    Soften yeast in warm water. Let
    stand
    5
    minutes.
    Add to milk and potatoes mixture, eggs, lemon extract and cinnamon.
    Add flour a little at a time, working smoothly into a nice dough, cover and let rise until double in bulk.
    Roll 1/4-inch and cut doughnuts and let rise.
    Fry
    in shortening
    or
    salad oil heated to 375\u00b0 until golden brown.
