Cracked Wheat Pilaf - cooking recipe

Ingredients
    1 c. large grain cracked wheat
    5 Tbsp. butter
    1 large onion, coarsely grated
    1 Tbsp. tomato sauce or 1 small tomato
    1 1/2 c. beef or chicken broth
    salt and pepper to taste
Preparation
    Wash cracked wheat with cold water.
    Drain and set aside. Place 2 tablespoons butter in a heavy saucepan; add onion and saute until golden brown.
    Add tomato sauce and cook another 5 minutes. Add broth, the rest of the butter, salt and pepper and bring to a boil.
    Add cracked wheat; stir once, cover and boil for 5 minutes on high.
    Reduce heat and cook until cracked wheat absorbs all the broth, about 25 minutes.
    Remove from heat, remove cover and place a napkin over pan.
    Replace cover.
    Leave in a warm place for 40 minutes.
    Should be flaky.
    Serves 6.
