Cooking Wild Game - cooking recipe

Ingredients
    opossum
    raccoon
    ground hog
Preparation
    Clean, wash and cut meat in serving size pieces.
    Place meat in heavy saucepan, covering with cold water and 1/2 teaspoon salt. Soak for 30 minutes.
    After soaking, place saucepan and its contents on medium-high heat and boil for 30 minutes.
    After boiling, drain liquid from meat.
    Return to burner and cover the meat with water again, adding 1 to 2 bay leaves and 2 tablespoons of lard or a small piece of salt pork.
    Cook until tender.
    Remove meat from cooker and place in baking dish.
    Sprinkle with salt and black pepper and bake at 400\u00b0 until brown.
