Sweet Potatoes - Apricot - cooking recipe

Ingredients
    1 (17 oz.) can whole sweet potatoes
    1 1/4 c. brown sugar
    1 1/2 Tbsp. cornstarch
    1/4 tsp. salt
    1/8 tsp. cinnamon
    1 tsp. shredded orange peel
    1 (16 oz.) can apricot halves
    2 Tbsp. butter or margarine
    1/2 c. pecan halves
Preparation
    Cut potatoes in half; place as one layer in greased 10 x 6-inch glass dish.
    Drain apricots, keep 1 cup syrup.
    In saucepan, combine sugar, cornstarch, salt, cinnamon, orange peel and syrup.
    Cook, stirring, on medium heat until it boils.
    Boil 2 minutes.
    Add apricots, butter and nuts.
    Pour over potatoes. Bake, uncovered, about 25 minutes at 375\u00b0.
