Louisiana Dirty Rice - cooking recipe

Ingredients
    2 Tbsp. flour
    1 c. onion, chopped
    1 c. celery, chopped
    1/2 c. green pepper, chopped
    2 cloves garlic, minced
    1/2 lb. ground beef
    1/2 lb. ground pork
    1/2 lb. chicken giblets, chopped
    2 tsp. salt
    1/4 tsp. black pepper
    1/4 tsp. red pepper
    1 c. chicken broth
    3 c. cooked rice
    1 c. sliced green onion tops
    2 Tbsp. vegetable oil
Preparation
    Brown flour in oil until it is a deep red-brown, stirring constantly to prevent burning.
    Add onions, celery, green pepper and garlic; cook until tender.
    Stir in beef, pork, giblets and seasonings.
    Continue cooking until meat loses it's color.
    Blend in broth; cover and simmer 25 minutes.
    Stir in rice and onion tops.
    Cook 5 minutes longer.
    Mixture should be slightly moist. Makes 6 servings.
    Rice can be placed in baking dish and served later, 350\u00b0 for 30 minutes, covered.
