Squash Paddies - cooking recipe

Ingredients
    2 c. grated uncooked yellow squash
    2 tsp grated onion
    2 tsp. sugar
    1/2 tsp. salt
    1/8 tsp. pepper
    1/4 c. plus 2 Tbsp. all purpose flour
    2 eggs, beaten
    2 Tbsp. Margarine
Preparation
    Combine first 5 ingredients in a medium bowl; cover and let stand.
    Drain thoroughly. (Hint:
    To drain, you will need to press down on ingredients because squash has a lot of water content.) Add flour and eggs.
    Stir well.
    Melt margarine in a large skillet over medium heat.
    Drop squash mixture by tablespoon into hot margarine.
    Cook until golden brown, turning once.
    Serves 6-8.
