Rhubarb Bread - cooking recipe

1 1/2 c. brown sugar
3/4 c. vegetable oil
1 egg
2 1/2 c. unsifted flour
1 c. buttermilk or sour milk
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
2 1/2 c. chopped fresh or unsweetened rhubarb, thawed
1/2 c. chopped walnuts or pecans (optional)
Preparation

In large bowl of electric mixer, beat brown sugar, oil and egg well.
Add flour, buttermilk, salt, soda, cinnamon and vanilla. Beat on low speed until mixed well.
Fold in rhubarb and nuts. Pour mixture into 2 greased and floured loaf pans.
Sprinkle with 1/2 cup sugar and 1 tablespoon butter, mixed until crumbly.
Bake at 325\u00b0 for 60 to 70 minutes or until done.
Wrap and store overnight to develop flavor.
Slices easier the next day too.
