Reunion Scalloped Potatoes - cooking recipe

Ingredients
    5 lb. potatoes, boiled in jackets, then peeled and diced
    1 small jar pimientos, finely cut up
    1 small onion, finely cut
    1/4 lb. butter or margarine
    1 Tbsp. flour
    1 tsp. salt
    1 can cream of mushroom soup
    1 c. milk
    1 lb. Cheddar cheese, shredded
Preparation
    Arrange potatoes in a buttered baking dish (9 x 13-inch). Combine the remaining ingredients in a saucepan and stir over low heat until blended and cheese is melted.
    Pour over potatoes. Bake in a 300\u00b0 oven for 1 1/2 hours.
