Ratatouille - cooking recipe
Ingredients

1 lb. eggplant, diced
4 oz. onion, chopped
2 garlic cloves, crushed
1/2 c. olive oil
2 green peppers, chopped
1 lb. tomatoes, skinned and diced
salt and pepper to taste
8 oz. zucchini, diced
Preparation

Heat the oil in a large frying pan.
Add the onion and fry until golden.
Add garlic and peppers.
Add eggplant, zucchini and tomatoes.
Fry vegetables gently, then cover and simmer for 30 minutes.
