Mashed Potato Casserole - cooking recipe

1 (28 oz.) bag frozen mashed potatoes, prepared according to directions
3/4 c. sour cream
2 large eggs
1 bunch chives, snipped (1/2 c.)
1/2 tsp. each salt and pepper
1/2 c. shredded sharp Cheddar cheese
Preparation

Preheat oven to 375\u00b0.
Lightly grease a deep 2 1/2-quart casserole.
Let prepared mashed potatoes cool slightly.
Stir in sour cream, eggs, chives, salt and pepper.
Spread in casserole. Bake uncovered 30 to 35 minutes.
Sprinkle with cheese and bake 10 more minutes until puffed and cheese is melted.
Serves 12.
