Mock Oyster Stuffing - cooking recipe
Ingredients

1/4 c. minced onion
1/2 c. minced celery
1/2 c. (1 stick) butter
1 qt. peeled and diced eggplant (1 medium)
1/2 c. water
1/2 tsp. salt
2 1/2 c. coarsely crumbled salted crackers
3 c. seasoned dried bread cubes
2 eggs, slightly beaten
1/4 c. milk or broth
1/2 tsp. poultry seasoning
Preparation

Cook onion and celery in butter over low heat. Simmer eggplant in water and salt for 10 minutes.
Pour both mixtures over crackers and bread cubes.
Add eggs, milk and poultry seasoning. Mix gently.
Use to stuff a 10 to 12 pound turkey.
