Souper Eggplant Casserole - cooking recipe
Ingredients

1 medium eggplant
1/2 medium onion, chopped
2 cloves garlic, minced
2 Tbsp. butter or margarine
2 Tbsp. oil
1 can tomato soup (plain or Italian)
1/4 c. milk
1 c. grated cheese (Monterey Jack or Cheddar)
1/2 tsp. salt
1/2 tsp. pepper
3/4 c. stuffing mix or croutons
Preparation

Cube unpeeled eggplant and saute in skillet in butter and oil with onion and garlic 15 minutes or until tender.
Combine soup and milk and add to eggplant, salt and pepper in greased 2-quart baking dish.
Sprinkle with stuffing mix or croutons and top with grated cheese.
Bake at 350\u00b0 for 25 minutes or until bubbly and golden.
