Carrot Casserole - cooking recipe

Ingredients
    5 c. carrots, sliced and cooked
    1/2 lb. diced Velveeta cheese
    1 cube margarine
    1 large onion, diced
    salt and pepper to taste
    1 tube Ritz crackers, crushed
Preparation
    Saute onion in margarine.
    In buttered casserole (8 x 12-inch), layer half the carrots and half the cheese; repeat layers.
    Top with sauteed onions and cover casserole generously with crushed Ritz crackers.
    Bake at 350\u00b0 for 30 minutes.
