Coffee Roast - cooking recipe

Ingredients
    3-4 lb. chuck roast
    1 c. vinegar
    1 onion, thinly sliced
    1 clove garlic, sliced
    2 c. brewed coffee
Preparation
    Make slits in roast about 2 inches apart.
    Place 1 slice onion in first slit and slice of garlic in next slit.
    Pour vinegar over roast, making sure it gets into slits.
    Cover and refrigerate overnight.
    Next morning, remove roast from vinegar and brown each side in hot skillet.
    Place in Dutch oven or slow cooker.
    Add coffee and additional water, if needed.
    Cook on medium heat 4-6 hours or until meat falls apart.
    Remaining juices make rich brown gravy to serve over rice or mashed potatoes.
