Beet Pickles - cooking recipe

Ingredients
    fresh beets
    2 c. vinegar
    2 c. sugar
    pickling spices
Preparation
    Wash beets with vegetable brush and place in a large pot. Cover with water and bring to a boil. Boil until able to pierce with fork, then remove from pot. Take vinegar, sugar, 1 1/2 cups beet juice and pickling spices and mix together.
    Place in pot and bring to a boil.
    Peel beets, then slice or dice.
    Place beets into clean and hot canning jars.
    Pour hot juice mixture over the beets and seal jars.
