Homemade Italian Sausage - cooking recipe

Ingredients
    8 lb. ground pork
    4 Tbsp. salt
    2 Tbsp. fennel seed
    1 Tbsp. sage
    2 tsp. black pepper
    2 tsp. red pepper (if hot sausage is desired)
Preparation
    Mix all ingredients well.
    Let stand overnight in refrigerator.
    Mix again.
    May be made into patties or stuffed in casings.
    Freezes well.
