Corn Maquechou - cooking recipe

Ingredients
    4 c. fresh cut up corn
    1/4 c. cooking oil
    1 c. cut up onions
    1/2 c. pepper, cut up
    2 large tomatoes or 1 can Ro-Tel tomatoes
    salt and pepper
Preparation
    Put oil, corn, onions and peppers in large iron pot and brown until sticky on bottom of pot.
    Add tomatoes, stirring and small amount of water to keep from sticking.
    Cook 45 minutes to 1 hour, stirring often.
