Ingredients

1 c. ammonia
1/2 c. vinegar
1/4 c. baking soda
1 gal. water

Preparation

Let a quart of buttermilk set until thick.
Pour 1 quart boiling water over it, stirring at the same time.
Let set a few minutes. Cheese will go to the bottom.
Pour off the water.
Put cheese in cloth to drain 1/2 day.
Add salt according to taste.
