Waldorf Rice Salad - cooking recipe

Ingredients
    1 1/2 c. apple juice
    1/8 tsp. salt
    dash of nutmeg
    2/3 c. unpeeled apple, chopped
    3 Tbsp. low-fat yogurt
    1 1/4 c. instant rice
    dash of cinnamon
    1/3 c. celery, chopped
    1/4 c. chopped walnuts
Preparation
    In a medium saucepan, bring juice to a boil.
    Stir in rice, salt, cinnamon and nutmeg.
    Cover; remove from heat.
    Let stand 5 minutes.
    Chill.
    Stir in celery, apple, walnuts and yogurt. Serves 4.
