Mexican Chicken Breasts(Low-Fat, Microwave Cooked) - cooking recipe

Ingredients
    2 trimmed chicken breasts
    4 crackers, crumbled (low-fat)
    2 Tbsp. margarine
    1 tsp. grated Parmesan cheese
    1/4 tsp. chili pepper
    2 servings Mozzarella cheese (part-skim)
    2 oz. slice no-fat American cheese, processed
    4 Tbsp. salsa
Preparation
    Melt margarine.
    Mix cracker crumbs, chili pepper and Parmesan cheese together.
    Dip chicken breasts in margarine, then in crumbs.
    Microwave 2 minutes on High.
    Remove and turn over; add rest of crumbs on top.
    Place 1 serving of cheese on each and 2 tablespoons salsa on each.
    Microwave 2 minutes or until center of meat is white.
    Serves 2.
