Eggplant Dressing - cooking recipe

Ingredients
    4 c. peeled, cubed eggplant
    1/3 c. milk
    1 can cream of mushroom soup
    1 egg, slightly beaten
    1/2 c. onion, chopped
    1 1/2 c. herb stuffing mix (reserve enough for topping)
    1/4 tsp. salt
    1 lb. butter or margarine
Preparation
    Cook eggplant.
    Combine all together remaining ingredients. Spoon into casserole dish.
    Sprinkle reserved stuffing mix on top. Bake at 350\u00b0 for 25 minutes.
