Chicken And Broccoli - cooking recipe

Ingredients
    1 lb. skinned, boneless chicken breasts, cut into bite-size pieces
    3 c. broccoli flowerets, cooked
    1 egg white, beaten
    5 tsp. soy sauce
    2 tsp. cornstarch
    1/4 c. vegetable oil
    8 oz. fresh mushrooms, sliced (about 2 c.)
    2 Tbsp. lemon juice from concentrate
    2 Tbsp. dry sherry
    1 Tbsp. chopped pimento (optional)
    hot cooked rice
Preparation
    In medium bowl, combine egg white, 3 teaspoons soy sauce and cornstarch and mix well.
    Add chicken; stir to coat.
    Refrigerate 1 hour.
    In large skillet, over high heat, brown chicken in oil; remove.
    Add mushrooms; cook and stir until tender.
    Add chicken, broccoli and remaining ingredients except rice; heat thoroughly. Serve with rice.
    Makes 4 to 6 servings.
