Hummus - cooking recipe
Ingredients

3 c. canned chickpeas, drained, rinsed and drained again
1/4 c. sesame paste (tahini)
2 Tbsp. water
1/4 c. lemon juice (fresh is best)
1/4 c. extra virgin olive oil
dash of salt or to taste
freshly ground black pepper to taste
paprika
Preparation

In bowl of food processor or blender, combine first five ingredients; process until smooth and creamy in texture, scraping sides of bowl occasionally.
Add salt and pepper.
Taste and add salt, pepper or lemon juice as needed.
If too thick, add small amounts of lemon juice and olive oil.
Transfer to a shallow bowl; sprinkle with paprika.
Refrigerate until ready to serve.
Eat as dip for pita bread.
