Crab Supreme - cooking recipe

Ingredients
    1 c. flaked crab meat
    1 or 2 green onions, chopped
    1 Tbsp. celery, chopped
    2 to 3 Tbsp. mayonnaise
    dash of salt and pepper
    Cheddar cheese
    English muffins
Preparation
    Split the English muffins and you may toast them before adding topping.
    I find it works all right either way.
    This is best, of course, with fresh crab.
    However, imitation crab works well. Celery should be chopped very fine and I like to use much more (say up to 3/4 cup).
    Mayonnaise is just enough to moisten. Combine all topping ingredients except the cheese.
    Spread topping on English muffin and then top with 1 to 2 thin strips of Cheddar cheese.
    Broil until heated through, not too high on broiler rack. Serve immediately.
    Nice with a tossed salad for lunch.
