Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplant
    2 eggs
    1 c. milk
    4 Tbsp. butter
    2 c. cracker crumbs
    1 medium chopped onion
    1/2 c. grated cheese
Preparation
    Peel and cut up eggplant. Cook until tender; drain, then add butter, salt, pepper, milk and well beaten eggs. Add onions and cracker crumbs. Pour in greased casserole dish.
    Sprinkle cheese on top. Bake for 30 minutes in 325\u00b0 oven.
