Carrot Muffins - cooking recipe
Ingredients

1/2 c. oil
2 c. packed brown sugar
4 eggs
2 c. flour
2 tsp. baking powder
2 tsp. lemon juice
2 tsp. vanilla
1 tsp. salt
2 c. grated carrots
Preparation

Combine first 3 ingredients and mix well.
Blend in rest of ingredients.
Bake in greased muffin tins at 375\u00b0 for 30 minutes. Makes 2 dozen muffins.
