North Carolina Grated Sweet Potato Pudding - cooking recipe

Ingredients
    4 large eggs
    1 1/2 c. milk
    1/2 c. light corn syrup
    1/2 c. sugar
    1/4 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    2 Tbsp. melted butter
    1 1/2 lb. sweet potatoes
Preparation
    Butter a 10 x 6 x 2-inch baking dish or shallow 1 1/2-quart casserole.
    In a large bowl, beat eggs just until yolks and whites are blended.
    Stir in milk and corn syrup until blended.
    In a small bowl, stir together sugar, salt, cinnamon and nutmeg until well mixed.
    Add to egg mixture and stir until blended.
    Stir in butter.
