Fresh Apple Cake - cooking recipe

Ingredients
    2 c. self-rising flour
    2 c. sugar
    1 Tbsp. baking soda
    1 Tbsp. cinnamon
    1 1/2 c. oil
    4 eggs (unbeaten)
    1 Tbsp. vanilla extract
    2 apples, finely chopped (Red Delicious)
Preparation
    Preheat oven to 350\u00b0. In large bowl, blend all dry ingredients. Add oil, eggs and vanilla; mix well. (No electric mixer necessary; I use a large wire whisk.) Add apples last. Pour into a greased and floured 9 x 13 cake pan. Bake for 45 minutes.
