Key Largo Roast Pork - cooking recipe

Ingredients
    3 to 3 1/2 lb. pork roast (rolled loin, loin end or center loin)
    1/4 c. fresh lime juice
    2 tsp. salt
    1/2 tsp. black pepper
    2 Tbsp. oregano, crumbled
    3 medium garlic cloves, crushed
Preparation
    Place pork roast in non-metallic container.
    Mix remaining ingredients and pour over pork roast.
    Cover container with 2 layers of plastic wrap.
    Place in refrigerator overnight.
    Remove meat from marinade and set marinade aside.
    Place meat on rack in roasting pan.
    Bake, uncovered, at 325\u00b0 for 35 to 40 minutes per pound.
    After 1/2 of baking time, remove from oven and pour marinade over meat.
    Return to oven and finish baking.
    Yields 6 to 8 servings.
