Catfish Amandine - cooking recipe
Ingredients

2 Tbsp. margarine
1 1/2 lb. catfish fillets
1/4 c. slivered almonds
2 tsp. grated lemon peel
4 tsp. lemon juice
parsley
lemon slices
Preparation

In a
large
frying pan over medium heat, melt 1 tablespoon of margarine.
Saute fish, turning once until fish just flakes when tested with
a fork.
Transfer to platter and keep warm.
In the same
pan,\tadd
remaining margarine, lemon peel and lemon juice. Saute
1 minute, reducing heat, if necessary to
avoid burning. Pour
sauce
over
fillets.
Garnish
with parsley and lemon slices.
