Jalapeno Corn Bread - cooking recipe

1/2 c. cornmeal
1/2 c. all purpose flour
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. garlic powder
1/2 c. cream style corn
1/4 c. egg substitute
1/4 c. reduced-fat cheddar cheese
1/4 c. fat-free milk
2 Tbsp. chopped green onion
1 Tbsp. butter or margarine, melted
2 tsp. chopped seeded jalapeno pepper
Preparation

Preheat oven to 425\u00b0.
In a large bowl, combine the first seven ingredients.
Combine the corn, egg substitute, cheese, milk, onion, butter and jalapeno.
Stir into dry ingredients just until moistened.
Pour into an 8-inch square baking dish coated with nonstick cooking spray.
Bake for 12 to 14 minutes or until a toothpick inserted near the center comes out clean.
Cut into squares; serve warm.
Makes 9 servings.
