Chicken Fricassee - cooking recipe
Ingredients

1 large (3 to 4 lb.) fryer
1/3 c. oil
4 Tbsp. flour
3/4 c. chopped onion
3 c. water
1 large can mushrooms, sliced
salt and pepper
seasoned salt
Preparation

Salt and pepper chicken.
Flour chicken and brown in oil; remove chicken.
Make roux by browning the flour in the same oil that the chicken was browned in.
Add and saute onion.
Add water and seasoned salt to taste.
Add chicken; cover and simmer for 1 hour.
Add mushrooms.
Continue to cook for another 20 minutes, uncovered, to reduce gravy, if desired.
Serve over rice.
