Banana Butter - cooking recipe
Ingredients

3 1/2 lb. ripe bananas
3 c. sugar
1/2 c. lemon juice
1/2 c. finely chopped red maraschino cherries
1 tsp. oleo or butter
Preparation

Mash bananas thoroughly. Measure 4 cups into 4 to 6-quart kettle.
Add sugar, lemon juice, cherries and butter.
Mix well. Bring to a hard, rolling boil, stirring constantly.
Reduce heat and simmer gently (uncovered) for 20 minutes, stirring often. Pour into hot jars, leaving 1/2-inch headspace.
Adjust lids. Process in boiling water bath for 10 minutes.
