Banana Custard - cooking recipe

Ingredients
    2 c. skim milk
    2 eggs
    1/4 c. sugar
    1/2 tsp. rum extract
    1/4 c. red currant jelly
    1 banana
Preparation
    Combine milk, eggs and sugar in saucepan. Cook over low heat until mixture thickens (do not boil), stirring constantly. Stir in extract and spoon custard into 4 dessert dishes.
    Cover and refrigerate about 1 hour. Before serving, melt jelly and stir in diced banana. Spoon 1/4 of jelly mixture on top of each custard. Serves 4.
