Portuguese Chicken Saute - cooking recipe

Ingredients
    1 broiler, quartered
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. olive oil
    1 Tbsp. butter
    2 large tomatoes
    1 clove garlic
    1 small onion
    1/2 c. sliced mushrooms
    1 Tbsp. chopped parsley
    1 Tbsp. dry white wine
Preparation
    Rub salt and pepper into chicken.
    Heat oil and butter in a frying pan or stove top casserole.
    Cook chicken about 15 minutes over medium-low heat until it is brown all over; remove from pan.
