Grandma'S Pumpkin Pie - cooking recipe

1 (15 oz.) can pumpkin
3/4 c. dark brown sugar, packed
1/2 tsp. salt
3/4 tsp. pumpkin pie spice
2 large eggs
1 (12 oz.) can evaporated milk
1 unbaked 9-inch pie shell (deep-dish)
Cool Whip (optional)
Preparation

Mix pumpkin, eggs, sugar, salt and spices in a large bowl. When well blended, add evaporated milk and continue mixing until mixed well. Pour into pie shell. Sprinkle pie with pumpkin pie spice. Bake at 425\u00b0 for 15 minutes. Reduce temperature to 350\u00b0. Bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool for 2 hours on cooling rack. Then serve with Cool Whip or refrigerate.
