Eggplant Parmesan - cooking recipe

Ingredients
    26 Premium crackers (any variety), finely rolled (about 1 c. crumbs)
    1 tsp. Italian seasoning
    1 medium eggplant, peeled and sliced in 1/4-inch rounds
    2 eggs, slightly beaten
    2 Tbsp. vegetable oil
    1 (26 oz.) jar spaghetti sauce (about 2 3/4 c.)
    3/4 c. shredded, part-skim Mozzarella cheese
    1/4 c. grated Parmesan cheese
Preparation
    Combine cracker crumbs and Italian seasoning.
    Dip eggplant slices in beaten eggs, then in cracker crumbs to coat completely.
