Psari Athos(Monk'S Mackerel) - cooking recipe

Ingredients
    4 mackerel (about 3/4 lb. each)
    2 small onions, chopped
    3 Tbsp. olive oil
    2 bay leaves, crushed
    juice of 1 lemon
    freshly ground pepper to taste
    1/2 tsp. salt
    1 tsp. dried oregano
    1/2 tsp. dried mint leaves
    12 pitted Greek olives
Preparation
    Have mackerel split and cleaned and have heads and tails removed, if desired.
    Rinse fish with cold water and dry well. Saute onions lightly in 1 tablespoon olive oil for about 5 minutes.
    Coat flat baking dish with oil and arrange fish in one layer so it will cook evenly.
    Cover fish with onions, remaining oil, herbs, seasoning and lemon juice.
    Top with olives.
    Cover dish with double layer of foil.
    Bake in a 375\u00b0 oven for about 1/2 hour or until fish flakes.
    Serve with plain boiled potatoes. Makes 4 servings.
